Safety evaluation of the food enzyme glucan endo-1,3-β-d-glucosidase from the genetically modified Streptomyces violaceoruber strain pGlu
The food enzyme glucan endo‐1,3‐β‐d‐glucosidase (3‐β‐d‐glucan glucanohydrolase; EC 3.2.1.39) is produced with the genetically modified Streptomyces violaceoruber strain pGlu by Nagase (Europa) GmbH. The genetic modifications did not give rise to safety concerns. The food enzyme was considered free from viable cells of the production organism and its DNA. It is intended to be used in two food manufacturing processes. The dietary exposure to the food enzyme–total organic solids (TOS) was estimated to be up to 0.012 mg TOS/kg body weight (bw) per day in European populations.
